Slice the carrots thinly.
Just after I had left school my mother took me out to lunch with some friends. It was unremarkable, except for the delicious carrots. We mentioned them when saying good-bye. "Plain boiled carrots are rather boring, aren't they?" replied our hostess.
Stew them gently in a thick bottomed pan with butter and a very little water until cooked. They will take about 30 minutes.
Season with salt pepper and a pinch of sugar.
