Baked bananas
I bought Elizabeth David's "Mediterranean Food" when it came out in paperback. This is the first of her recipes I ever tried. The original recipe, like many of hers, gives little idea of quantities. The version below is for 4 people.


  Ingredients:

    8 bananas
    tablespoon honey
    2 tablespoons soft brown sugar
    juice of an orange and a lemon
    a good pinch of nutmeg and cinnamon
    a small glass of rum
    grated lemon peel
    tablespoon butter

Peel the bananas and split them in half lengthways.

Arrange them in a rectangular flat oven-proof dish.

Scatter and pour over all the ingredients except the butter. Dot the butter over the top.

Bake in a moderate oven (180° C, Gas mark 4) for about 30 - 40 minutes.

To quote the original: "The sauce should be thick and syrupy."
