The bananas can be as ripe as you like and can even have been frozen.
125g (4 oz) brown flour
Line and grease a square (or round) cake tin or loaf tin. Set the oven to 160° C (Gas 2 - 3).
Sift and mix the flours and baking powder.
Put the margarine into a large mixing bowl add the sugar and mix. Add the flour, fruit and nuts. Mix.
Break in the eggs. Mix. Pour in the mashed bananas. Mix for one minute.
Put into the baking tin and cook for 45 minutes then lower the heat to 150° C (Gas 2) for a further 45 - 60 minutes until cooked.
We were given this recipe during the seventies. It is not really bread at all, but a very delicious cake.
Ingredients:
125g (4 oz) white flour
2 ½ teaspoonfuls baking powder

225g (8 oz) SR flour
And
125g (4 oz) soft margarine at room temperature
175g (6 oz) soft brown sugar
125g (4 oz) raisons
50g (2 oz) chopped candied peel
50g (2 oz) glace cherries
25g (1 oz) chopped walnuts
2 eggs
450g (1lb) mashed ripe bananas
