Nutty Crumble Mixture


Making nutty crumble This crumble mixture keeps very well in the freezer and means that making fruit crumbles is very easy. It can be made by hand but is best adapted for a food processor.

I usually use hazel nuts but others, such as walnuts, can be used.

  Ingredients for 500 g (approx 1lb):

    100 g (3½ oz) plain white flour
    100 g (3½ oz) brown flour
    125 g (4 oz) butter
    100 g (3½ oz) Demerara sugar
    75 g (3 oz) nuts

Put the flour into the machine and buzz briefly to mix.

Put in the butter in little pieces and the sugar and buzz for 15 seconds.

Add the nuts and buzz for 5 seconds.

Continue processing (if necessary) until the mixture is like small crumbs. Don't go on too long or it will turn into one huge lump!

Put into a plastic bag or box and freeze until wanted.
