A 7-year-old girl wrote down the recipe for me.
200g (7oz) flour
Set the oven to Gas Mark 4, 180°C (350°F).
Mix the ginger into the flour and then rub in the butter. Mix in the sugar, syrup and finally the milk.
Turn out onto a floured board and knead briefly.
Divide into two. Roll out evenly and not too thinly and cut into rounds
Bake for about 10 minutes or until they are a pale golden brown.
Put onto a wire rack to cool. Store in an airtight tin.
In the late 70's I went into a school where some children had been making these delicious biscuits.
(Even then metric weights were used to measure the ingredients in school.)
Ingredients to make 3 dozen biscuits:
5 ml (1 teaspoon) ground ginger (more if you like)
50g (2 oz) butter
125g (4 oz) sugar
30 ml (2 tablespoons) golden syrup
15 ml(1 tablespoon) milk
